
- Any mix of vegetables of your choice. Any vegetables will work
- Peel and skin vegetables if need be
- Slice veggies for grill to allow more even cooking surface
- Brush with olive oil
- Preheat grill to high heat and grill veggies until tender or to your liking
- Place on baking sheet to cool, once cool, cut into bite size pieces and place in a bowl
